Egg yolk gives a full, creamy taste in the mouth. Smoked salmon and avocado complement this mouthfeel nicely, while the acidity of the pickled red onions breaks through that creaminess so that you can fully taste the egg in every bite.

Preparation

The pickled onions
Bring the sugar, vinegar and water to a boil while stirring.
Slice the onions into thin half-moons and place them in a bowl.
Pour the hot liquid over the onions and leave to cool completely.

Mash the avocado with a fork and sprinkle with lemon juice.
This prevents discolouration and adds some nice acidity.
Season with pepper and salt. Stir in some fresh dill.

Thinly slice the radishes.

Fry the bread briefly so that it is nice and crispy.

Spread a generous layer of avocado on the bread.
Place a few slices of smoked salmon on top.
Garnish with the radishes and pickled red onions.

Cut the egg into thin slices and place them on the bread.
